RECIPE: Flawless PANCAKES


Flawless Pancakes


These are called "Flawless" because you cannot find anything wrong with them (even if you try...but do not do that)! 
Whether you're gluten or dairy intolerant, if you are vegan, if you're a fan of superfoods and overall healthy stuff - this recipe is for you! 

Ingredients:
1 cup gluten free flour (I used some Einkorn flour and some Amaranth flour)
1 tbsp sprouted flax meal
2 tsp gluten free baking powder
2 tsp cinnamon (optional) 
1/4 cup apple sauce
1/4 tsp salt
1 tsp vanilla bean extract
1 cup non-diary/nut milk

Preparation: 
1)
Mix the dry ingredients. If you want extra fluffy and airy pancakes you can sift them. 
2) In a separate bowl combine the wet ingredients and whisk well together. 
3) Preheat a non-stick pan or grill over medium heat. 
4) Combine dry and wet mixtures. Grease the pan (even if it's a non-sticking surface your dough contains no fat, so just to make sure use some coconut oil or vegetable oil cooking spray)
5) Using an ice cream scoop, portion your pancakes and place them on the pan. NB! Make sure the pan/grill is very hot, if not you risk ruining your first batch of pancakes - they will stick and most likely fall apart...you don not need that negativity in your life (wink-wink). Aim for perfection! 
6) Cook a couple of minutes on each side. Good way to say if it's time to flip the pancakes is when they start bubbling around the edge. 

Enjoy with your favourite homemade jam, some fruit or the classic - maple syrup! 


Now let me open a parenthesis here and talk a little bit about the nutrition facts in these Flawless pan-wonders! 

First of all - all of your allergies and intolerances are taken care of. But wait, it gets better - we are using sprouted flax seed. One thing you need to know about sprouted seeds and nuts is that they soak up their fill of water and go from dormant to alive!  And if you are like me and use your own homemade nut milk (HOW TO: Prepare Homemade RAW Almond Milk) you can also substitute a couple of table spoons of your gluten free flour for some of that remaining nut flour you have left after preparing the milk!

 We are also using cinnamon - a powerful metabolic booster and insulin regulator. If you don't like the taste you can skip that part but it really compliments well the applesauce flavour in the mixture.
